Bikini Recipe

Makes enough for 10 people

Ingredients for the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Premix (produces 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Method

Making the Cordial: Combine all the components inside a saucepan, bring to a simmer, agitating until the sugar dissolves. After that, turn off the burner and leave to cool entirely. Pour into a clean bottle, close it and refrigerate it in the refrigerator, where it will keep for around a month.

For the Premix: Mix all the liquids into one sizeable container, allow it to infuse for 60 minutes, then pass it through preferably using a fine cloth, to ensure it's fully clarified.

To serve: Add 85ml of your premix into a mixing glass filled with ice, and agitate gently for about 60 seconds to cool it down. Strain into an cold coupe glass or equivalent, decorate with a few cranberries and finish by giving it a light spray of mandarin oil above the glass.
